Blackeye Peas were brought to the US from Africa. This light, cream colored, oblong bean has a defined black round “eye” on the curved inner side. They have a distinct flavor which is savory with a light crunchy texture. They are commonly found in the US dish called Hoppin’ John, which if eaten on New Year’s Eve is said to bring a prosperous year filled with luck. On top of that, they are a delicious addition to any chicken or pork dish.
